If you’re anything like me, you have plenty of days when you look at the clock late afternoon and despair at the fact that there still isn’t a dinner plan. I WISH I would love to be in the kitchen, but alas, dinner (and breakfast and lunch) are a “have-to-do” for me. I enjoy eating food that others have made, but I am not a foodie which my sister informed me of not so long ago. Ha!
In a desperate attempt to get better at this part of my life and to, PLEASE! enjoy it (could it happen??), I’ve chosen to at least somewhat regularly, post recipes that I’ve tried and have received the approval of the fam bam. Because in order to do that, I’ve got to actually try recipes, and in order to do THAT, I have to intentionally think about the 6 or 7 dinners that are mine to prepare every week. (Just typing, “6 or 7 dinners…every week” makes my blood pressure go up. For real. Your prayers are accepted! AND YOUR FAVORITE RECIPES!!!) Bless. Yes, please send me your recipes!
So here’s probably my #1 go-to meal. It’s so quick and simple that’s it’s perfect for even the likes of me!
Here it is-
1# ground beef, browned with onion, and drained
1 1/2 qt. tomato juice
1/3 c. sugar
15 oz. black beans
15 oz. whole kernel corn
1 package taco seasoning
Put (for me that means dump! I love dump recipes-they’re the best) all ingredients into a kettle (or crock pot!) and bring to a boil. Thicken with 1/4 c. water and 3 Tbsp. corn starch.
Serve with sour cream, cheddar cheese, and tortilla chips.
A few notes-
I add the sugar NEVER. Literally never. Who needs more sugar?? But, hey, you do you here! And I go with my mood-either an extra can of corn or black beans. But always an extra can of one or the other. And I always use clean taco seasoning that I mix up on my own. (If you want that recipe, let me know. Time’s running out to get dinner on the stove, you know…!)
We love this soup with a side salad and corn bread or any other bread that’s around!
